Foothills Sea Salt Caramel Fudge Sundae with Butterscotch Popcorn
2-3 scoops Foothills Creamery Sea Salt Caramel Fudge Ice Cream
Salted caramel Sauce:
1/3 cup Foothills Creamery Unsalted Butter
½ cup icing sugar
1 cup double cream
1 tsp flaky sea salt
1 tsp coconut oil
¼ cup freshly popped pop corn
Heat a large heavy saucepan and add unsalted butter to melt
When butter has melted, add icing sugar and stir with a whisk frequently until mixture is a golden brown caramel colour
Remove from heat and immediately whisk in half the double cream and whisk until smooth
Mix in the rest of the cream, vanilla and sea salt; mix until smooth. Set aside to cool
In a medium saucepan, heat a small amount of coconut oil. Once hot, add in popcorn and cover with lid. Pop popcorn until fully popped.
In a medium bowl add popcorn and drizzle with a small amount of caramel sauce, toss to coat. Set aside.
When you’re ready to serve the sundaes, pour a small amount of caramel into the bottom of each sundae cup. Add a few pieces of popcorn on top of the caramel. Now add desired scoop(s) of Foothills Creamery Sea Salt Caramel Fudge ice cream. Repeat with layer of caramel and popcorn and garnish with hazelnut ice cream scrolls! Enjoy immediately.
